My current research activities are in the area of food structure and health, with the aim of developing food structures that prevent or reduce the incidence of long-term chronic disease. This includes studies of molecular structure and interactions at interfaces in food foams and emulsions, studies on the structure-function behaviour of starch and investigation of the molecular origins of the bioactivity of plant cell wall polysaccharides. Current and future direction of my research has been made possible by the use of novel probe microscopic methods that I have developed and applied to food systems (www.ifr.bbsrc.ac.uk/spm). These have allowed molecular investigation of previously intractable complex biological systems. I have published over 300 research papers, including two textbooks This research has been recognised by the award of 'highly cited researcher' status by ISI for research related to agricultural science, fellowship of the International Academy of Food Science and Technology and award of the Food Hydrocolloids trust medal. I co-authored the first textbook on AFM for biologists. I was recently awarded an MBE in the 2012 Queen's Birthday Honours list for services to Food Science.
