Artur Zdunek is graduated from Maria Curie-Sklodowska University (physics), PhD and habilitation from Institute of Agrophysics PAS (agriculture-agrophysics). Professor at the Institute of Agrophysics PAS in Lublin and the Head of the Department of Microstructure and Mechanics of Biomaterials in this institute. His research focuses on the role of structure in plant biomechanics and his particular specialty is image analysis, structure evaluation with CSLM and AFM and mechanics. He was coordinator of several projects concerning fruits structure, biomechanics and innovative methods for fruit quality evaluation. At present he is leading the project on “Atomic force microscope (AFM) study on enzymatic degradation of polysaccharides structure in cell wall of fruit”. He is also member of two COST actions: on “Applications of atomic force microscopy to nanomedicine and life sciences”, TD1002, and on “The application of innovative fundamental food-structure-property relationships to the design of foods for health, wellness and pleasure”, FA1001.
