Józef Fornal

Józef Fornal, graduated from University of Agriculture, Food Technology Faculty in Olsztyn, Poland is Professor in Food Technology. He was a Deputy Dean of this Faculty and also v-ce Director of the Institute of Animal Reproduction and Food Research Polish Academy of Science in Olsztyn, and until 2009 Head of the Department of Physical Properties of Food. In years 2005-2006 Treasurer at the Food Structure and Functionality Forum of the American Oil Society and from 2008 member of Editorial Board of Food and Bioprocess Technology. Until 2010 he held also position of the v-ce President of the Agrophysics Committee of the Polish Academy of Science. In 1998 he was the Chairman and main organizer Conference on Structure and Functionality of Food Products held in Mrągowo, Poland. His main interest is searching for relationship between microstructure of raw materials, processing and quality of food products. He is the author of over 150 scientific papers, several chapters in books as well as over 200 presentation on national and international conferences.
